After the separation, she dated Costaki Economopolos. The two even welcomed their first child Eva Rhea Economopolos on 20 October 2008. Costaki was a long-term partner of Caroline, but they had a split.
As of now, Costaki is married to another woman and is enjoying his time with his wife.
She got the privilege of being a mother at the age of 44. Maybe this is the reason why she does not want to take any risk with Eva. She said that she did not even walk on the road for the first five years after having the baby. She mentioned it took her so long to have a baby and now she would not want to take any chance in her life.

She also said that the cooking gene had skipped one generation in the family, as her mother was a great cook and her daughter is already good at it.
